is there a way to tell Logic to use the RX frequency instead of the actual TX frequency when spotting FT4/FT8?

I don't think so.

Why is FT4/8 different in this regard?

Maybe just my brain overthinking things. Some spots you see on FT8 will show (for example) 14.074, others will show 14.0735 or some such. Since you're going to see pretty much all of the FT8 spectrum anyway in the waterfall, it just seems strange to me to see multiple spots for the same station with different freq's.
